Chimichurri

This a nice fresh-tasting sauce that goes well with various meats like sausage, chicken, and pork.

Servings: 6
Time To Prepare: 15-20 minutes

Ingredients

  • 1 Cup of finely chopped carrot greens

  • 1 TBSP of fresh cilantro (optional for extra flavour)

  • 2 Garlic scapes

  • 2 TSP dried oregano

  • 1/4 TSP cumin

  • 1 TSP paprika

  • 1/2 TSP red pepper flakes

  • 1/2 TSP salt

  • 1/4 Cup white wine vinegar

  • 1/4 Cup extra virgin olive oil

  • Freshly ground black pepper


Instructions

Step 1
Remove the stem from the carrot greens, wash.

Step 2
Chop the carrot greens, cilantro, and garlic scapes finely. A food processor works well for this.

Step 3
In a bowl, mix the chopped greens from the previous step with the spices, oil, and vinegar.Mix well.

Step 4
Add freshly ground black pepper to taste

Step 5
Use as an accompaniment to any grilled protein or is quite nice with focaccia bread

Step 6
Will keep for 4 days in the refrigerator
